About the Role We are seeking a motivated and experienced Chef to join our team at Journey Beyond Cruise Sydney, with an immediate start. This is a full-time position based in Sydney. As part of our leadership team and managing a small kitchen brigade, the Chef is responsible for end-to-end kitchen operations and directing the food preparation process to ensure the highest standard and quality of food production for our guests. Your duties will include: Kitchen Operations Management : Oversee end-to-end kitchen operations on Spirit of Migloo , including hands-on food preparation, cooking, and dish approval for lunch and dinner cruises (including private charters), while ensuring compliance with hygiene and safety regulations. Team Leadership and Training : Manage the kitchen brigades’ roster and work performance standards; train, mentor, and coach staff; and handle recruitment, onboarding, and performance management activities to foster a positive team environment. Stock and Inventory Control : Control food inventory budget and manage stock ordering and receipting goods, including liaising with suppliers and vendors; conduct end-of-month stocktakes to ensure efficient kitchen supply management. Maintenance and Compliance : Ensure cleanliness and organisation of the kitchen; log maintenance requests; investigate non-compliant issues; and ensure adherence to safety, sanitation, and food safety guidelines as per the NSW Food Authority. Shifts commence and finish at Jones Bay Wharf in Pyrmont, Sydney. The expected annual salary range for this position is $77,000 - $80,000 base salary Superannuation. Requirements About You Minimum 3 years’ experience in a similar in a similar Chef role Commercial Cookery Certificate (essential) Food Safety Supervisor course (essential) Provide First Aid (essential) Demonstrated experience producing high-quality food unsupervised, with knowledge of all sections Strong communication skills with the ability to control and direct the food preparation process Exceptional attention to detail to ensure all dishes are up to standard Leadership skills with the ability to coach and mentor Cooks, Chefs and Kitchen Hands People leadership skills; the ability to provide positive direction to others and actively provide constructive feedback in order to develop & motivate others Proficiency with financials to ensure stock control is within budget Adaptability to change and willingness to embrace new ideas and processes A cross-cultural awareness and sensitivity to the welfare of others Entitlement to work in Australia with no restrictions Must not be affected by seasickness A pre-employment medical and National Police Check may be required as part of this recruitment process.
